Minwax does have a wipe on polyurethane in a satin finish that will protect the barn wood.

A friend and i managed to find a beautiful barn door and so i took it home and it sat in my garage for quite some time.

Once the wood was dry from its cleaning i used a regular paint brush and sparingly applied the minwax finish.
Be sure to ask if your barn board is kiln dried.
Place a few pieces of the salvaged wood in a plastic bag for 48 hours.
Not knowing the size or purpose of your barn wood i d suggest mineral oil as used for butcher block.

Kiln drying barn board is less important for the dimensional stability of the boards and more important for killing any insects left on or in the wood.
One thing you should be aware of though is that there are some metal roofing panels that do not work well for siding.
The soft surface it provides over reclaimed barn wood has the additional benefit of not being ruined by fingerprints.
The proper approach to this is to install vertical strips of wood over the cracks from the outside.
Old barn wood can retain the smell of a farm for decades.
Barn board is almost always salvaged as vertical siding so vertical orientation of your boards reproduces a more authentic barn look.
Just guessing here but i bet you re leaving the gray or otherwise old surface of the wood intact.
